Oyster Plates
In the early 1800’s oyster plates were sold on the streets, in hotels, and oyster rooms. So popular were oysters during the civil war period that Southerner’s created ”mock oysters” from flour, eggs, butter and corn fried in oil. During the WW I period oyster beds became depleted, availability decreased and prices rose dampening people’s enthusiasm for the product.
